The inspiration for this salad came to me this week as I only just moved into my new flat in London (exciting!) and so barely had any food in the house at all. What I did have however, was some salad from my parents’ garden, some strawberries, rice, and almonds, and so this salad was born!
I don’t believe that eating healthy should be complicated in any shape or form, which is why you won’t find any recent recipes of mine that contain any weird and wonderful ingredients or superfood powders. I just find them a bit unnecessary and expensive to be honest. I love food that’s easy and simple to make, with ingredients you can easily find at pretty much any supermarket, and that doesn’t cost a fortune. This salad (I hope you agree) is an example of that. Done in 30 minutes – less if you have pre-cooked rice – and yet so colourful and delicious!
Serves 1 as a main
Ingredients:
150g mixed greens of your choice
60g wild/black rice
20 strawberries
A small handful of almonds
1 tbsp lemon/lime juice
A pinch of salt
Balsamic vinegar
What to do:
- Rinse the rice, then cook with a pinch of salt until done (around 25-30 mins)
- Halve the strawberries
- In a bowl, mix together all the ingredients then plate up and drizzle with balsamic vinegar
