Crumble is more of an Autumn/Winter kind of dessert, but I wanted to mix it up a bit and bring some colour and spring into it. This crumble is a delicious combination of sour citrus and sweet crumble topping that’s so far from your typical apple crumble dessert. The pistachio topping then just gives it that extra edge!
Serve with vanilla ice cream or soy yoghurt for best results!
Serves: 4
Ingredients:
1 orange, zest and segments
1 red grapefruit
2 passionfruit
3-4 tbsp syrup
40g pistachios, shelled
60g oats
4 tbsp syrup
2 tsp coconut oil (melted)
What to do:
- Preheat the oven to 160°C
- Grate the orange zest into a small pot
- Segment and chop the orange and grapefruit and add to the zest
- Halve and scoop out the passionfruit
- Add the syrup, mix and cook on medium heat to thicken up the juices so the mixture isn’t too liquid
- In the meantime, add the pistachios and oats to a blender or food processor and pulse until the pistachios are in relatively small pieces
- Add the syrup and coconut oil and pulse again until just combined
- Empty the citrus mixture into the bottom of an oven-safe dish and spoon the crumble evenly on top
- Bake in the oven for around 20-30 minutes until crisp on top

I think crumbles are great for any time of the year! They’re best slightly warm with a scoop of healthy ice cream!
