Apples apples everywhere… literally I have several bags full of them next to the freezer at the moment. Do apples freeze well? This might have to be done seeing as they’re starting to go mouldy and there’s only so many apples I can take at one time! So needless to say I’ve been experimenting with apples, I even contributed an apple and blackberry oatmeal recipe on WellToDoLondon which is super delicious. I knew I didn’t’ want to make a standard apple crumble (although I will soon) so instead I made these apple cookies, and thanks to the oats they really taste like apple crumble in a cookie form. Everyone loves them, they’re super healthy, and really easy to make. I also added some raisins because they go so well with apple, but these are optional.
Ingredients:
100g peeled and roughly diced apple
100g oats
50g almonds
1 tbsp cinnamon
1 tsp baking powder
1/2 cup almond milk
1 banana
2 tbsp coconut oil
100g peeled and very finely diced apple
1/2 cup raisins (optional)
What to do:
- Preheat the oven to 200°C
- Cook the roughly diced apple in a splash of water until soft, then mash slightly to get an apple sauce consistency
- Add the oats and almonds to a food processor until it forms a flour, then add the cinnamon and baking powder
- Blend together the almond milk, banana, and coconut oil until smooth
- Tip the dry ingredients into a bowl and add the wet mixture
- Stir in the finely diced apple and raisins
- Line a baking tray with greaseproof paper, add 1 tbsp dollops, and then smooth them out to make the cookie shape
- Bake for 20-30 minutes depending on their size, until golden and crisp all around
- Leave to cook for at least 15 minutes before serving

You could yes but I wouldn’t recommend it as plant milk is much better for you!
