Sometimes you just wake up the morning and crave something really warm and comforting that feels more dessert than breakfast. Sound familiar? That was definitely what I felt this morning when I created this heaven in a bowl. The combination of the oats, the stewed apple, and the spices make this taste just like apple pie.
Serves 1
Ingredients:
1 Granny Smith apple
30g oats
50g finely grated courgette/zucchini (optional, you can add more oats instead)
100mL almond milk + 100mL water
1 tsp cinnamon
1/4 tsp nutmeg
1tsp sweetener of choice
What to do:
- Peel the apple and chop it into small cubes (about 1cm x1cm)
- Add them to a small pot with a little water and the cinnamon, and stew them for around 10 minutes until soft (in the meantime eat the skin for extra fibre, don’t waste it!)
- Use a potato masher or a fork to mash the apples into a chunky applesauce, but don’t over-mash as you want some pieces left
- Add the rest of the ingredients and cook for a further 5 minutes until it reaches the desired consistency
- Serve hot and top with apple slices, chopped almonds, and extra cinnamon to get the authentic apple pie taste
