The apples are falling! Finally the apples in my parents’ garden are ripe and ready to use, which means its time for crumbles, cakes, and (of course) pancakes! I first made the pancakes almost a year ago, and I can’t believe the recipe wasn’t up on here yet! These pancakes are vegan and gluten free (I love the taste of buckwheat flour), yet super fluffy and delicious.
I love the tradition of taking extra time on a Sunday to make pancakes and be lazy. Why not try these next time you have a day off?
Ingredients:
2 tbsp chia seeds + 8 tbsp plant milk
100g apple, peeled and diced
70g buckwheat flour (or gluten-free flour of choice)
1 tsp baking powder
1/4 tsp baking soda
1 tbsp cinnamon
1/2 cup plant milk
Coconut oil
What to do:
- Mix the chia seeds and milk, and leave to one side to thicken up
- Cook the apple in a splash of water for around 5 minutes until soft, then mash lightly (leaving some chunks)
- Place all the ingredients apart from the apple in a blender/Vitamix and blend on high power until the chia seeds are completely ground up
- Pour into a bowl/jug and stir in the cooked apple
- Melt about 1/4 tsp of coconut oil in a pan on low-medium heat, and add in 2 tbsp of pancake mixture. To ensure extra fluffiness don’t spread the mixture out, and cook the pancake for a long time (at least 2-3 mins) before flipping it over and cooking the other side until done. Repeat this until all the mixture is gone!
- Serve with some homemade jam and fresh fruit/goji berries/mulberries.

Better late than never I guess – I wanted to check before I dive in with making some of your recipes, would this recipe work with GF flour blend? (I have Dove’s Farm at the moment.)
