I’m really on a vegetable fries rampage at the moment, I have them almost every day. So when I found some beautiful parsnips from Borough Market in my fridge I knew exactly what to do with them! Parsnips have such a wonderful earthy flavour that I really love, and when roasted they go wonderfully crisp on the outside but sweet and soft on the inside. Mmm heaven…
Serves 1
Ingredients:
1-2 parsnips
Extra virgin olive oil
Rosemary
Salt and pepper
What to do:
- Preheat the oven to 230°C
- Wash and trim the parsnips, and then cut into long thin slices
- Place them on a baking tray lined with greaseproof paper and rub them in a little olive oil (I find this way I use less than when drizzling), and sprinkle over some salt, pepper, and rosemary
- Roast for around 20 minutes or until they are nice and brown
If you’re feeling fancy you can serve these in little paper cones, or otherwise eat fresh and hot out the oven!
