Oh yes, this happened. I hope you’re as excited about this as me because these are absolutely incredible! Chocolate and mulled wine all in one, what more could you possibly want at Christmas. If you’re a fan of mulled wine like me, you’ll likely have a constant supply of mulled wine around the house by now, and the rest of the ingredients are things you should have anyway. So do yourself a favour and make these for Christmas!
Makes: 16 brownies
Ingredients:
4 tbsp coconut oil
6 tbsp aquafaba (chickpea water)
80g coconut sugar/other granulated sweetener
1 tsp vanilla essence
Pinch of salt
1 tsp baking powder
50g cacao powder
200ml or 3/4 cup cold mulled wine
130g plain flour
Chopped nuts (optional)
What to do:
- Preheat the oven to 180°C
- Melt the coconut oil in a mixing bowl
- Add the aquafaba, sugar, vanilla, salt, and baking powder and stir until combined
- Add the cacao powder and mix until the mixture is smooth and thick (you’ll likely need a whisk)
- Stir in the mulled wine
- Gradually sift in the flour
- Pour the mixture into a greased/lined baking tin (mine was square) so that the mixture sits at least 2cm thick
- Optional – sprinkle over some chopped nuts
- Bake for around 30 minutes, or until a toothpick just comes out clean
- Leave to cool for at least 5 minutes before cutting into pieces
- Serve with more mulled wine!
